Earlier today, a huge text dump from the Monster Hunter Wilds open beta was shared online by dataminers, apparently revealing the IDs of several returning monsters that are currently unannounced. As Reddit user Hte_D0ngening2 explains on the GamingLeaksAndRumors subreddit, the series has used the same IDs for monsters throughout the series, allowing dataminers to figure out exactly which monsters that have spent a reasonable amount of time on the sidelines will make a comeback.

In total, four unannounced returning monsters were revealed in this data mine, three of which have not been seen since Monster Hunter Generations Ultimate. These are the Gravios and Gypceros (monsters that have been in the series since the first game), as well as the Nerscylla, which were introduced to the series in Monster Hunter 4.

So if your favorite monster isn't there, there's still a chance it will appear in the main game.
